Healthy Cottage Cheese and Banana Muffins for Children

As a new mom, I have found myself in the stereotypical category of wanting to do all things related to my baby perfectly! It may… or… may not help that I have an education in human nutrition, so I am very aware of which foods pack the most nutrients for my baby and those that do not.

It has been such a joy exploring foods with my infant since he turned six months old. He loves trying new foods but has already found some that are his favorites. A few of those being cottage cheese, bananas and peanut butter!

Mornings are often busy in our home. After my infant finishes nursing, I have about an hour until he is ready for a bite to eat. Often, I feel a bit overwhelmed at the thought of preparing a breakfast that will meet his needs for the morning.

Since I have discovered this about myself, I decided to think of a way to make morning breakfast more efficient and less of a pain point. Insert the star of this post- Healthy Cottage Cheese and Banana Muffins for Children

Indeed, that is a mouthful of a recipe name but trust me, your child will not only enjoy these muffins but also benefit from them in other ways as well! The cottage cheese, peanut butter, and eggs work together to create a powerhouse of protein and healthy fats! These nutrients help your little one grow strong and healthy. 

Ever wondered how your child could go from eating a large breakfast to feeling hungry only an hour later? Often times the structure of the meal and what foods were consumed can be the culprit of that short-lived full belly. Because these muffins are high in protein and healthy fats, you will find that your child will stay fuller longer.

These muffins are great for a breakfast meal paired with yogurt, fruit, or eggs. Of course you could also serve as a snack or dessert! 

So, lets get to making these delicious and healthy muffins!

Step One:

Start by preheating your oven to 350°F (180°C)

Step Two:

In a large bowl, combine the flour and baking powder. I like to sift my flour and baking powder just to make sure it is well incorporated.

Step Three:

In another bowl, mix the cottage cheese, peanut butter, eggs, and mashed banana until smooth. 

Step Four:

Pour the wet mixture into the dry ingredients and stir until just combined.

Step Five:

Divide the batter evenly into a greased or lined muffin tin.

Step Six:

Bake for 20-25 minutes or until golden and a toothpick comes out clean. The outside of the muffin will have a nice crunch, while the inside will be moist and fluffy. 

Step Seven:

Allow muffins time to cool before removing from tin. Eat fresh or store in a freezer bag for a quick grab and go option.

Ingredients
  

  • 2 Cups Flour Oat or Plain
  • 2/3 Cup Cottage Cheese
  • 1/2 Cup Peanut Butter
  • 2 Large Eggs
  • 2 Ripe Bananas Mashed
  • 1 Teaspoon Baking Powder

Instructions
 

  • Preheat your oven to 350℉ (180℃)
  • In a large bowl, combine the flour and baking powder
  • In another bowl, mix the cottage cheese, peanut butter, eggs, and mashed banana until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined.
  • Divide the batter evenly into a greased muffin tin.
  • Bake for 20-25 minutes or until golden and a toothpick comes out clean.
  • Allow to cool before removing from the tin.

Notes

These muffins do not contain added sugar making them suitable for infants who are developmentally ready to consume. While the ripe bananas add a hint of sweetness, if you would like to add additional sweetness you can choose one of the following options:
  • 1/4 C Sugar 
  • 1/2 Cup Apple Sauce
